My Easy Crock Pot Chicken and Dumplings Recipe

I don't know about you but I love chicken and dumplings.  I don't always have the time to make everything from scratch but I still want a good home cooked meal.  This recipe is one of my answers.

I also have to tell you I love crock pot bags.  Why on earth not use them! I used to shy away from my crock pot because I had a few recipes that were a pain to clean after.  Not with crock pot bags!  You just put the bag in before you start and you lift it up and in the trash it goes when you are done.  Cleaning my crock pot now could never be easier.

Okay so this time of year you want something that is warm and filling.  There is nothing better than a big bowl of chicken and dumplings.  Now that I have kids I really don't have the time to make dumplings so I go for the quick biscuits from the refrigerator or whip up some from a box.  I know if the before kids me could see what kids do to your cooking.

This is what you will need:

  • one pound boneless skinless chicken breast
  • small onion chopped
  • carrots (I use baby carrots for ease)
  • 2 stalks celery chopped
  • garlic
  • 1 or 2 potatoes cut bite sized
  • one can mushroom soup
  • one box container chicken broth( I use low sodium)
  • refrigerated biscuits or prep biscuit dough yourself torn or cut into bite sized pieces

This is where the ease comes in.  I put the veggies on the bottom and top with the chicken.  You can add any seasoning you might like to taste.  I put the crock pot on low and let it cook all day 6-8 hours.  The last half hour of cooking you add the prepped biscuits to the crock pot and stir.  Cook an additional 30 minutes and enjoy!
