The Most Amazing Potatoes EVER!

 

So you must be asking what are the The Most Amazing Potatoes EVER? Well let me tell you they are easy and they will be a must on your families menu. I have a ton of potatoes right now. They were on sale and so I stocked up and now I have to use them before they turn on me. So of course I made a big batch of them. Okay so what am I waiting for, on with the recipe!

6 russet potatoes cut in half

3 cloves garlic minced (or to taste, we like garlic)

pinch of rosemary

pinch of dill

2 bay leaves

salt and pepper to taste

olive oil

Get a large pot and place your cut potatoes in with enough water to cover them. Add all the seasonings to the water. Yes you read that right! I never thought of it before but let me tell you the flavor is awesome! Cook on high heat until boiling. Let boil for about 5-7 minutes depending on the size of potatoes. Drain. Let the potatoes dry while you set the oven to 375.

Line a cookie sheet with foil. I spray the foil with a little bit of cooking spray. Place the dried potatoes cut size down on the sheet. Drizzle oil over each potato.

I think add a little more seasoning to the oiled skin. Put them in the oven for around 35-45 minutes. You want the potato flesh to be crispy brown. That’s it!

I like to top them with cheese, sour cream, or if you really want to load them up you can put taco meat and your favorite taco toppings. My girls love that! Of course they are perfect just the way they are!

Naked Infusions Salsa Review

We are major salsa lovers in this house.  Even my 4 year old and 2 year old are all about salsa.  If they have a chip there better be some salsa around!

I was lucky enough to be able to review Naked Infusions Salsa.  I love the fact that Naked Infusions is organic and use local California farms to make this amazing salsa.  I'm originally from California and can tell you tomatoes from there are amazing!

Naked Infusions make many different flavors.  I love having different flavors to choose from.

The flavors are:

• Signature Ripe Tomato (mild, medium, or hot)
• Oaxaca White Chocolate
• Rustic Blue Cheese
• Fire Roasted Garlic
• California Burnt Sage
• Black Silk Espresso

I love all of them honestly.  My favorite I have to say is Fire Roasted Garlic, I love garlic.  I can also tell you I normally don't like blue cheese anything.  I am one that is always tries everything. How can you say you don't like something if you haven't tried it.  Well I have to tell you I really like the Rustic Blue Cheese, I'm glad I tried it!  The Oaxaca White Chocolate is very flavorful, it has almost a creaminess to it.  California Burnt Sage reminds me of an Italian salsa, it is very good.  The Black Silk Espresso has coffee undertones, it is great. The Signature Ripe Tomato comes in mild, medium, and hot.  Each level of heat is perfect.  I love hot salsa and this is a amazing hot.

Every flavor has a unique flavoring to it.  The are all great in their own way. My family really enjoyed the sampling process too.  My oldest was having a blast, she loves salsa like me.  She has been eating it since she was 6 months old.

I also have to mention that their tortilla chips are awesome!!!

I am always looking for good snacks.  When you have had blood sugar issues you know how important a  nightly snack is.  I'm not diabetic, but I was gestational diabetic in both pregnancies.  I do have sugar sensitivities.  I am insulin resistant, basically my body doesn't recognize the insulin properly so it keeps making it and eventually I can end up with diabetes if I'm not careful.

Knowing my risks I try to be very careful.  Eating well throughout the day and keeping track of the carbs and protein I eat are a good idea.  Combining carbs and proteins together help.  I was very excited to try NightFood Nutrition Bars.  They have a perfect balance of carbs and protein, making them a great night time snack.

Having a balanced nightly snack when you have sugar issues helps your liver not dump sugar throughout the night.  If you liver senses that your blood sugar is too low it can make sugar.  If you have issues it can make too much which gives you high fasting numbers.

Of course you don't have to have issues to enjoy NightFood Nutrition Bars.  They are really perfect for everyone.  They are low in calories and like I stated before they are a perfect combination of carbs and protein, which is good for everyone.

I really love NightFood Nutrition bars.  They have a great flavor.  I also like the fact that they help you feel full without adding too many calories.  

I will be the first one to admit that when I'm feeling snacky if I don't have a good option, I go for a not so good one.  I think that is human nature.  You will no longer have to give in to eating something you shouldn't before bed if you have NightFood Nutrition Bars on hand.  They also support a good night sleep, how can you go wrong?
